- 1 Tbsp. olive oil
- 1 pinch salt
- 1 fennel bulb (medium, very thinly sliced, use a mandolin about 1-1 ½ cups)
- 1/4 red onion (very thinly sliced, about ½ cup)
- 3 peaches (ripe, sliced into ½ inch wedges)
- 4 oz. baby arugula (organic)
- 20 basil leaves
- 1/2 cup pumpkin seeds
- 1 garlic clove (finely minced)
- 1 tsp. whole grain mustard (optional)
- 1 tsp. honey (or agave, optional)
- 3 Tbsp. vinegar (white balsamic, champagne, sherry, red wine or a light colored infused vinegar)
- 1/2 cup olive oil (good)
- 1/2 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
