  • 2 pounds peaches (ripe, halved, stone removed, sliced)
  • 2 tablespoons orange juice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1 cup self-rising flour
  • 2 tablespoons sugar
  • 3 tablespoons butter (cold, chopped)
  • 1/2 cup cold milk
  • 1 egg (lightly beaten)
  • 1/2 teaspoon vanilla extract

    Directions

    1. Preheat oven to 400°F. Grease a 7 cup baking dish. Toss peaches with orange juice, brown sugar and cinnamon; arrange over base of prepared dish. Bake for 15 mins or until bubbling and hot.
    2. Meanwhile, sift the flour into a large bowl. Stir in sugar. Rub in butter to make fine crumbs. Make a well in center; add milk, egg and vanilla. Using a round-bladed knife, cut through the mixture until it forms a soft dough, adding 1-2 tbsp more milk, if needed. Turn out dough onto a lightly floured surface. Knead briefly until smooth.
    3. Shape dough into 12 balls. Place balls over hot fruit mixture. Bake cobbler for 25-30 mins or until topping is golden.
