  • 1 teaspoon kosher salt
  • 3 large eggs
  • 1 1/2 cups sugar
  • 1/2 cup cooking oil (I use canola.)
  • 1 tablespoon pure vanilla extract
  • 2 cups peaches (peeled and chopped fresh, about 1/2" pieces)
  • 1 cup pecans (chopped toasted and salted, I like Trader Joe's "Toasted and Salted Pecan Halves".)
