- 2 Tbsp. sugar
- 3/4 tsp. salt
- 1 cup unsalted butter (cold, cut into cubes)
- 5 Tbsp. cold water
- 1 tsp. apple cider vinegar
- 3 lb. peaches (ripe, I used about 6 peaches)
- 1 cup fresh blueberries
- 2/3 cup granulated sugar (depending on the sweetness of your peaches)
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/8 tsp. ground ginger
- 1/8 tsp. ground coriander
- 3 Tbsp. all-purpose flour
- 1 Tbsp. cornstarch
- 2 tsp. fresh lemon juice
- 1 egg (beaten, for egg wash)
- 2 Tbsp. sugar (and 1/2 teaspoon ground cinnamon, for topping crust before baking)
