- 1/4 cup carrot (finely diced, omit the core)
- 1/4 cup celery stalks (finely diced, or celery root)
- 1/4 cup diced onion (finely)
- 1/3 cup cremini (diced fresh, white, or shiitake mushroom)
- 1 Tbsp. soaking liquid (mushroom)
- 2 dried shiitake mushroom (rehydrated in 1/4 to 1/3 cup water, stems discarded, then thinly sliced into small pieces)
- 2 Tbsp. truffle butter
- 9 oz. puff pastry (rolled out to 1/8 inch thick)
- 3 1/2 cups chicken stock (East-West, or homemade chicken stock or vegetable stock, at lukewarm temperature)
- 1 egg white (beaten)
- 1 egg yolk (beaten with 1/4 teaspoon water)
