- 160 grams macaroni (wholemeal, or penne)
- paprika (A little, plain or smoked, to sprinkle on top of casserole whilst cooking, optional)
- 1 Tbsp. olive oil
- 1 onion (large, chopped)
- 2 cloves garlic (crushed)
- 3 courgettes (cut lengthways, then sliced into semi-circles)
- 1 red pepper (large, de-seeded and sliced into square chunks)
- 2 cans chopped tomatoes (tins)
- 1 can green lentils (or brown, rinsed and drained OR 100g dried lentils – cooked to make just over double this weight)
- 2 bay leaves
- 1 tsp. oregano
- 2 tsp. canela (level tsp)
- salt
- black pepper
- 30 grams margarine (1oz vegan, or 2 tbsp oil)
- 1 Tbsp. wholemeal flour (heaped, OR GF version: 2 heaped tsp arrowroot)
- 225 mL rice (or other plant milk, eg rice, oat, almond - preferably unsweetened)
- 1 onion (stuck with a few cloves)
- 1 bay leaf
- 1 pinch dried thyme
- 1 pinch grated nutmeg
- salt
- black pepper
- 5 Tbsp. nutritional yeast flakes (Marigold Engevita brand, sold in health stores)
