  • paprika (A little, plain or smoked, to sprinkle on top of casserole whilst cooking, optional)
  • 1 tablespoon olive oil
  • 1 onion (large, chopped)
  • 2 cloves garlic (crushed)
  • 3 courgettes (cut lengthways, then sliced into semi-circles)
  • 1 red pepper (large, de-seeded and sliced into square chunks)
  • 2 cans chopped tomatoes
  • 1 can green lentils (or brown, rinsed and drained OR 100g dried lentils – cooked to make just over double this weight)
  • 2 bay leaves
  • 1 teaspoon oregano
  • 2 cinnamon (level tsp)

  • 3 teaspoons wholemeal flour
  • 225 milliliters rice milk (or soya)
  • 1 onion
