Description
You are invited to a holiday potluck luncheon but have no idea what to bring. You sign up for a salad dish, and now you are scouring through recipes. This Pasta, Spinach and Goat Cheese Salad is perfect. It is hearty and takes about 40 minutes to prepare. Remember to plan accordingly as this is a recipe for 2 servings. Ingredients include pasta, spinach, salami, goat cheese, parmesan cheese, tomatoes, purple onion, garlic cloves, olive oil, red wine vinegar, and salt to taste.

- 200 grams pasta
- 2 cups spinach (sliced)
- 6 slices salami (sliced into strips)
- 50 grams goat cheese
- 4 Tbsp. Parmesan cheese (shredded)
- 2 tomatoes (medium, diced)
- 2 Tbsp. red onion (minced)
- 1 garlic clove (peeled and minced)
- 2 Tbsp. olive oil
- 1 Tbsp. red wine vinegar
- salt
- ground black pepper

Directions
- Heat water in a large cooking pot at high heat. Once boiling, cook pasta for 8 to 10 minutes, turn off the stove, strain, and let it cool off completely.
- Mix the tomato, onion, garlic, olive oil, red wine vinegar, and a pinch of salt and black pepper in a large salad bowl.
- Add the pasta, salami, spinach, goat cheese, and Parmesan cheese. Mix slowly and serve.
