- 1 lb. orecchiette pasta (we like DeLallo, or any small pasta such as shells)
- 3 tsp. olive oil
- 8 oz. crimini mushrooms (trimmed and sliced)
- 1 large garlic clove (minced)
- 1 tsp. fresh rosemary (minced)
- 1/2 cup dry white wine
- 3/4 cup Pecorino Romano cheese (grated, Parmesan is a good substitute)
- 2 Tbsp. fresh parsley (minced)
- 1 Tbsp. lemon juice
- salt
- pepper
- shaved Parmesan cheese (for garnish optional)
