- grated Parmesan cheese (if available)
- 1 onion (small, chopped)
- 2 cloves garlic (chopped)
- 1/2 tsp. dried thyme
- 400 grams tomatoes (chopped or whole, broken up)
- salt
- ground black pepper (about 1/2 tsp)
- 1/4 piece scotch bonnet (finely chopped after adding the tomatoes)
- 1 tsp. sugar
- 1/4 can water
- 350 grams boneless, skinless chicken breast
- 1/4 Quaker Instant Oatmeal
- 1 egg white
- 1/4 tsp. ground black pepper
- 1/2 tsp. mustard (I used American brand)

- 1 tsp. finely chopped fresh parsley (optional)
