- 2 ears sweet corn (shucked and kernels removed, roughly 1½ cups sweet corn kernels)

- 8 oz. roasted red peppers (packed in water, roughly chopped, About 1 cup chopped peppers)
- 3 baby arugula (packed cups)
- 1/3 fresh basil leaves (packed cup, thinly sliced)
- 1/2 tsp. crushed red pepper (optional)
- 3 Tbsp. balsamic vinegar
- 4 oz. goat cheese (crumbled)
