Description
Pasta salad is perfect for parties, barbecues, banquets and holidays. This delectable dish is hearty and full of gooey goodness. The dressing is easy to make. Ingredients include light mayonnaise, Dijon mustard, pickled jalapeno brine, salt and pepper. Cook the pasta. Add the toppings, which include chopped sausages, cubed queso panela or mozzarella and shredded Monterey jack cheese, as well as some spicy and tangy ingredeints. It’s a party for your mouth.

- 1 cup pasta (cooked al dente)
- 2 sausages (chopped)
- 3 slices pickled jalapeño peppers (or to taste, chopped)
- 1/3 cup panela cheese (cubed, may substitute mozzarella)
- 1/3 cup Monterey Jack cheese
- 6 pitted olives (minced)
- 1 Tbsp. light mayonnaise
- 1 tsp. Dijon mustard
- 1 tsp. vinegar (of the jalapeno peppers)

Directions
- In a bowl, mix the mayonnaise with the mustard and vinegar. Season with salt and pepper to taste.
- We add the rest ingredients, stir and bring to refrigeration.
- That's it!!! it is obviously eaten cold.
- If you want to add more fiber, you can take a mixture of green leaves in another mold (you could even use those salads that are ready sold in bags, ready to eat).
