- penne pasta (a pack of your favorite)
- 3 Tbsp. oil
- 5 curry leaves
- 1 strip pandan leaf
- 3 cardamoms (slight bruised)
- 1 large onion (sliced fine)
- 2 Tbsp. minced garlic
- 1/2 tsp. turmeric powder
- 1/2 tsp. chilli powder (add more if you want it spicy)
- 1 Tbsp. curry powder
- 2 Tbsp. tomato paste
- 1 can whole peeled tomatoes (or 3 large tomatoes chopped really fine)
- salt (to season)
- 1 Tbsp. sugar
- 1 cup coconut milk (thick)
- veggies (A cup of your choice frozen, I mixed in a few green peas)
- 1 tsp. Italian seasoning
