- 1 yellow onion (medium, finely diced)

- 2 celery (medium ribs, finely diced)

- 1/2 cup white wine
- 6 cups low sodium chicken broth
- 1 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 29 oz. cannellini beans (or chickpeas, or combination, rinsed and drained)
- 1/4 cup dried lentils (rinsed, preferably French green lentils, but any green or brown lentils are fine)
- 1 cup canned tomatoes (diced or chopped, with their juices)
- 2 bay leaves
- 1 Tbsp. fresh rosemary (minced)
- 3/4 cup dried pasta (such as elbow macaroni or ditalini, whole wheat is fine)
- 1/3 cup parmigiano (freshly grated, Reggiano, plus more for serving)

QUICK, EASY & TASTY
Made this on a weeknight with lots of veg from our garden (added some chopped Italian chard and kale), homemade bone broth and a little leftover Italian sausage instead of the pancetta called for.
Added some pesto on top. Delish!

Delicious after adding a half pound of bacon and some Italian sausage. (Not much fat or flavor otherwise!) Now it’s our favorite soup.

Added some Hungarian peppers and replace Ed the celery with fennel - gave it a touch of heat and added another level of flavor with the fennel. This recipe was a good place to start.

Very yummy! I made this vegan. I eliminated the meat, used vegetable broth. used vegan parm cheese and added nutrional yeast. Also added a heaping teaspoon of miso paste for added flavor. The whole family enjoyed!

Absolutely delicious! a cup of crushed tomatoes Substituted a cup of crushed tomatoes for the diced. We love Rosemary, but for those who aren’t as keen I would back it off to 1/2 tsp
