- 1 Tbsp. virgin olive oil (extrar-)
- 1 onion (medium, chopped)
- 4 cloves garlic (minced)
- 1 red bell pepper (medium, cut into short, narrow strips)
- 4 cups cauliflower florets (bite-sized, and stems)
- 2 lb. tomatoes (diced ripe, substitute a 28-ounce)
- 1 can diced tomatoes (when good, ripe ones are unavailable)
- 1 Tbsp. curry powder (good-quality, more or less to taste)
- 1 tsp. dried basil
- 16 oz. chickpeas (drained and rinsed)
- 1/2 cup raisins (dark)
- 2 baby spinach (big handfuls, or arugula, or more, as desired)
- 1/4 cup chopped fresh cilantro (or parsley, optional)
- salt (to taste)
- hot red pepper flakes (Dried, to taste)

It was a tad dry but my kids and hubby loved it! I added almonds on top for a crunch! 😊
