  • 4 cloves garlic (minced)
  • 1 pound linguine (or spaghetti)
  • 1 1/4 cups grated Parmesan cheese (finely, plus more for serving)

    Turned out great! Start the pasta late in the recipe as you'll need the sauce ready to put on the pasta right after your strain it, otherwise it'll stick together a lot more. Also if you're a fan of very crisp bacon, i'm going to suggest either doing 1/4in cuts of the bacon or not cooking it nearly as long as you normally would. Otherwise they'll just be crunchy squares that are a bit more unruly for Carbonara.

    It was good. I added one less egg and I feel maybe I should have stuck to the recipe so that there was more sauce and creamier. Overall, very yummy. I’ll make again

    Delicious! Especially day 2! I made a couple of modifications based on my available ingredients: I used minced garlic and it toasted up beautifully and added great flavor. I had pancetta so I used that with 2 strips of bacon - it worked great and was the right amount of fat. No fresh parsley- bummer. The one thing I may do differently next time is use 2 eggs and 2 yolks instead of 3 eggs 1 yolk

    I lessened the eggs by using 1 whole egg and 2 egg yolks, and added more Parmesan cheese, with some chili flakes in the sautéing of the garlic. It was definitely a great and easy recipe! I will definitely save this one for future carbonara, yum!

    Easy recipe and was very tasty. Adding a half cup of pasta water made the sauce very runny though. I would have liked a silkier sauce.

    It was good, but I added sauteed chicken because there was a disproportion of meat to noodles. It could have used a little more of the egg mixture but I was pleased with the taste, Turned out great!
