  • 3/4 cup passionfruit (nectar)
  • 1 1/4 cups unsweetened pineapple juice
  • 1/3 cup sugar
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons lime juice
  • 1 mango (medium ripe, peeled, pitted and finely chopped)
  • 3 passionfruits (pulp scooped out)

    Directions

    1. Place passionfruit nectar, pineapple juice, sugar and 3/4 cup water in a medium saucepan on low heat. Stir until sugar is dissolved. Remove from heat.
    2. Meanwhile, sprinkle gelatin over 2 tbsp cold water in small bowl. Let stand for 5 to 10 mins. Stir gelatin and lime juice into the saucepan until gelatin is dissolved. Pour into 6 dessert glasses or bowls; cover with plastic wrap.
    3. Refrigerate for several hours or overnight, until set.
    4. To serve, top with mango and passionfruit.
