For my first attempt at fried chicken, this went extremely well. I modified the recipe a little by using all Panko breadcrumbs instead of a mixture, but that had no ill effect, and I'm not sure what's the difference between Panko and other breadcrumbs anyway. I don't have a thermometer, however, so it was difficult to guess when the oil was hot enough or when the chicken was done - some pieces got a little burned - but I'd still make it again
