Very tasty recipe. Let’s see I seasoned and toasted some Panko breadcrumbs with a little paprika, pepper, pinch of salt and a squeeze of lemon. I let it cool a little, added it to the Parmesan and paprika mixture then used a Meyer lemon olive oil to brush onto the cod and I pressed the mixture into the fish. It was loose but it stayed on almost till the end of eating. I also placed a bunch of grape tomatoes on the sheet pan with the fish and sprinkled them with a little of the mixture. My wife and I loved it. Would totally make it again.

Well the cod fillets I got were much larger/thicker than what’s shown, so needed a few more minutes. I also broiled the top to brown a bit, as my oven was definitely at 400 deg but top did not get crisp. I think I over-cooked a bit, but it was still really good. I will make again with thinner filets. Husband loved it to so it’s going into our rotation. Thanks!

Listen! This is the only way I will prepare Cod moving forward! So delicious! Crunchy on the outside, tender and juicy on the inside! Don’t change a thing!!
