- 6 russet potatoes (medium, cubed large, small red or yellow potatoes work too - just use more like 8 or 9 of them)
- 3 Tbsp. avocado oil (melted butter or olive oil work too)
- 1 tsp. sea salt
- 2 1/2 tsp. italian seasoning (I used Naturally Free Italian Season Blend - so flavorful!)
- 1/3 cup grated Parmesan (It is just as good without the parm, so if you are dairy free just leave it out!)

Loved these, I did not have Italian seasoning on hand so I used a vegetable seasoning oregano and basil
It came out awesome definitely adding these to regular dinner rotation

Super delicious!! We add a few extra spices and extra Parmesan cheese. The potatoes are firm on the outside and soft on the inside. I don't think we'll ever make regular roasted potatoes again!
