I also added chopped mushrooms and half a diced onion and sautéed with the garlic along with 1/4 tsp of oregano. I also drizzled the halved squash with olive oil and salt and pepper before roasting the oven. I only used 1/3 cup of chicken stock.
We loved this dish and I have forwarded the recipe on to my sister and daughter. Will certainly make again.

Loved it! Hubby who hates so many squash said "actually, I like like it" that's a ringing endorsement from him when it comes veggies as a main course
Update- made this a couple of times since, and it hasn't turned out! What ever I messed up the first time, I can't replicate- so I don't bother making this any more :(
