- 6 Tbsp. Best Foods Light Mayonnaise (or Hellmann's®)
- 2 Tbsp. grated Parmesan cheese
- 12 oz. boneless, skinless chicken breast halves
- 1 Tbsp. seasoned bread crumbs
- 2 small tomatoes (seeded and chopped,, 1 1/4 cups)
- 1 cucumber (small, seeded and chopped,, 3/4 cup)
- 1 Tbsp. fresh basil leaves (chopped, or cilantro leaves)
- 2 tsp. red wine vinegar
- 2 cups cooked brown rice

Directions
- Preheat oven to 425°.
- Combine 4 tablespoons Hellmann's® or Best Foods® Light Mayonnaise with cheese in small bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.
- Bake 20 minutes or until chicken is thoroughly cooked.
- Meanwhile, combine remaining 2 tablespoons Mayonnaise, tomatoes, cucumber, basil and vinegar in medium bowl.
- Slice chicken, then evenly top with creamy bruschetta mixture. Serve with hot cooked rice.

I’ve never done it with the topping (family is not a tomato or cucumber fan) however I have made the chicken several times and it is a favorite!
