I've been making this recipe for years after stumbling across it on a night when I didn't have dinner planned and just started Googling recipes based on what I had in the house at the time. Super easy, SO delicious. Even my picky mother who hates chicken gobbles it up.

this was easy to make & very good! My husband loved it & ate every bite of it. This is huge because he is very, very, very picky & never holds back from telling me he doesn't like something. This recipe had several things he doesn't like so I was surprised but loved that he wants me to make this a regular menu item! Thank you for sharing!

This was very tasty but next time I will take the skin off the chicken breasts, as it was flabby and not crispy. I think this would really rock, UNDER the chicken skin. The other idea I have is to use this mixture with left over chicken. I would take chunks of chicken or turkey, mix with the artichoke mixture, and a little al dente penne. Then I would back it in the oven until it was all bubbly and lightly browned. I will let you know how that works out.

I used fresh artichoke hearts. It was delicious I will do it again because my family loved it. Serving it with orzo was a lso a great idea.
