- 1/2 Tbsp. salt
- 1 tsp. ground black pepper
- 1 tsp. dried oregano (crushed)
- 1/2 tsp. dried thyme (crushed)
- 2 chicken breast halves (skinless and deboned)
- 2 Tbsp. red wine vinegar
- salt
- ground black pepper
- 1 tsp. olive oil
- 2 tomatoes (saladette, in wedges)
- 1 globe tomato (in wedges)
- 3 cups lettuce (in bite-sized pieces)

Directions
- Mix the paprika, brown sugar, salt, pepper, oregano, and thyme.
- Cover the chicken with this mixture and marinate for 24 hours in the refrigerator.
- In a medium bowl, add the vinegar, salt and pepper to taste, and stir. Slowly add the olive oil and continue to stir. Add the tomatoes and marinate for a few minutes.
- Place a bed of lettuce on a plate, then add the tomatoes with the dressing.
- Add the chicken on top and serve.
