- 1 leek (cleaned and minced)
- 3 cloves garlic (minced)
- 1/2 tsp. kosher salt
- fresh ground black pepper
- 2 Tbsp. fresh rosemary (minced, thyme or sage)

- 2 Tbsp. dry sherry (or Cognac)
- 1 1/2 cups liquid (reserved mushroom, or a combination of vegetable or chicken stock and mushroom liquid)
- 2 Tbsp. butter
- 1 handful Italian parsley (chopped for garnish, optional)
