- 1/2 papaya (a 9-10 inch long unripe, Green Papaya, about 3 cups shredded and packed)
- 2 cups water
- 1 1/2 cups sugar
- 1/2 tsp. salt
- 1 1/2 tsp. cardamom (seeds powdered, adjust taste to how strong a flavor you want)
- raisins (optional)
- 4 Tbsp. mango ginger (grated, use more or less depending on how strong a flavor you would want)
- 1 whole lemon (+ half a lemon, about 4-5 tablespoons, more or less to taste)
- 1 pinch turmeric (for the yellow color if you want, optional)
