- 1/2 mango (slightly firm, peeled and cut into matchstick slices)
- 1/2 cucumber (thinly sliced, oe bean sprouts)
- 4 oz. rice noodles (Maifun, cooked drained and rinsed as directed for salad)
- 1/2 lb. shrimp (salad, cleaned and cooked)
- 1 head butter lettuce (washed and separated into individual leaves2)
- 2 Tbsp. cilantro (finely chopped)
- 2 green onions (chopped)
- 1/2 cup creamy peanut butter
- 1 can coconut milk
- 4 oz. pineapple juice
- 2 tsp. garlic chili sauce (or more, I used Huy Fong Foods)
- 2 tsp. sesame oil
- 2 Tbsp. fresh cilantro
