- 1 papaya (ripe)
- chives
- 1 Tbsp. lemon zest
- 1 tsp. sesame
- 40 mL rice vinegar

Directions
- Grate the daikon and papaya thinly with a mandolin.
- Place gratings in 2 separate bowls.
- Cover the daikon with icy water. Let soak for about 15 minutes, then drain by squeezing out as much water as possible.
