- 1 lemon (Zest of)
- 1 Tbsp. fresh squeezed lemon juice
- 2 tsp. vanilla extract
- 1 1/2 tsp. lemon extract
- dried fruit (any ,works well in this bread. Dried cranberries, apricots, and cherries are especially nice.)
- 11 oz. brown rice flour (2 1/3 cups)
- 3.25 oz. sorghum flour (3/4 cup)
- 3 oz. potato starch (1/2 cup)
- 4 oz. granulated sugar (1/2 cup)
- 1 1/2 tsp. xanthan gum
- 1 tsp. baking powder
- 1 tsp. salt
- 1 cup milk (2% or whole, about 100°F.)
- 2 packets active dry yeast (1/4 ounce each)
- 3 egg yolks
- 2 large eggs
- 2 Tbsp. vegetable oil
- 2 Tbsp. corn syrup (or honey)
- 4 oz. butter (1 stick)
