Description
Rather than relying on a packaged mix, make your own pancake mix from scratch. It will be more economical and also takes only a couple minutes to do. You can even measure out the dry ingredients and keep them in a jar for making pancakes at a moment's notice, adding the eggs and milk when you are ready to get started. Here, the eggs are separated and the whites beaten until stiff, for fluffier results.

- Separate the egg yolks from the whites.
- In a bowl, add the egg yolks, milk, sugar, and salt.
