- 14 oz. light coconut milk (can organic)
- 3 kaffir lime leaves
- 1 1/2 tsp. grated lime peel
- 1 Tbsp. golden brown sugar (firmly packed)
- 1 1/2 cups carrots
- 28 oz. firm tofu
- 1 1/2 cups carrots (1/4- to 1/3-inch-thick slices peeled, about 3 medium)
- 1 red bell pepper (large, cut into 3/4-inch pieces)

Wasn’t as savory as expected. I will make again with a few modifications as the dish was still good for a first time.

Pretty tasty with modifications, but still not amazing. Doubled the spices and added a little lime juice. Used one package tofu and fried it before adding to the sauce. Just seemed like it was missing something, maybe more lime would have helped. Good enough though. Would make again with some more tweaks.

It was good!
I left out the chili paste because I didn’t have any. I added a few shakes of chili powder instead. I added a small amount of potatoes. It wasn’t as sweet as in restaurants so I added 2 tbsp of light brown sugar.

This recipe lacked the savory element. Next time I will MAKE sure to use unsweetened coconut milk. I think this made it too sweet. I will taste to see if it needs brown sugar.
Modification: I used vegetable broth instead of water, the kids hate carrots, so I used potatoes (boiling before hand would be a good idea.) Add extra onion powder and garlic to make it less sweet.
