- 1 lap cheong sausage (about 40gm), finely diced (lap cheong, about 40gm, finely diced)
- 2 spring onions (white part only, thinly sliced into rings)
- 2 shiitake mushrooms (finely diced)
- 1 1/2 tsp. sesame oil
- 2 tsp. potato starch (see note)
- 1 Tbsp. vegetable oil (plus extra for brushing)
- 12 sugar snap peas (trimmed)
- 125 mL chicken stock
- 1 Tbsp. oyster sauce
- 1/2 tsp. vegetable oil
- 1 dash dark soy (or to taste)
- 1/2 tsp. potato starch (mixed with 1 tbsp water)
