- 1 Tbsp. olive oil
- 1/2 cup chicken stock (I used homemade chicken stock, but you could use canned chicken broth)
- 1/2 cup apricot preserves (no-sugar-added or sugar-free, I used Smucker's sugar-free apricot preserves)
- 2 Tbsp. Dijon mustard
