- 50 grams unsalted butter (plus extra for greasing)
- 450 grams dover sole (sustainable whole, skinned on both sides, see tip)
- 25 grams plain flour (seasoned with salt and pepper)
- 1 lemon (small)
- 2 Tbsp. dry white wine
- 1 Tbsp. white wine vinegar
- 25 grams shallots (very finely chopped)
- 1 Tbsp. double cream
- 75 grams unsalted butter (chilled, cut into 1cm pieces)
- 1 1/2 tsp. capers (small, nonpareilles, drained and rinsed)
- 1 Tbsp. curly leaf parsley (chopped)
