- 1 shallot (diced, or ¼ Cup red onion)
- 8 oz. mushrooms (cremini, shiitake or morels)
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- salt
- pepper
- sauce (Spring Pea Truffle)
- 2 cups peas (fresh shucked, blanched briefly, or use frozen)
- 1/2 cup water (plus 1 T more if necessary, to get the blender going.)
- 2 Tbsp. olive oil
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. truffle oil
- 3/4 tsp. salt
- 1/4 tsp. white pepper
- 1 garlic clove (small)
- 1/3 cup fresh tarragon (basil, mint or Italian Parsley, I like tarragon)

Pea sauce was great! Very versatile to use with other seafood recipes. Mint is a must!

Didn't have truffle oil but even without it everything tastes great. Loved that pea sauce. Could be used by itself on bruschettas or as a dip. Never used mushrooms as a side for the fish, came out great. I used lake trout, but this recipe definetely works best with pan seared "red meat" fish.
