  • squid (1 kgr., cleaned)
  • olive oil (to taste)
  • garlic cloves (finely chopped)
  • 1 bunch parsley (coarsely chopped)
  • salt
  • 1 lemon

    Directions

    1. Wash the squid and set it aside.
    2. Heat a splash of oil in a frying pan and add the garlic. Fry the garlic just a few minutes, being careful not to overcook.
    3. Add squid and cook slowly until they are tender, then increase the heat slightly to get the squid to a golden brown color.
    4. Season with salt.
    5. Serve the squid with lemon juice to taste and garnished with plenty of parsley.

    I changed the parsley to tarragon, but it turned out delicious and sweet. Helped that I used same-day fresh Oregon squid, absolutely delicious.
