Worked! I was a bit skeptical about the process but I used a cast iron pan and the oven…but it turned out perfectly for MediumRare! My new steak go to!

Excellent! I overcooked my steaks because I forgot to set a timer when it was searing, and then left it in the oven an extra 5 minutes (I didn’t use my meat thermometer and thought it didn’t feel firm enough by the touch method), so mine ended up well done, but it was still extremely tender and not dried out. I’ll definitely have to make this again sometime!
