  • 3 carrots (peeled, cut into matchsticks)
  • 1 cucumber (cut into matchsticks, discard seeds)
  • 2 1/2 inches fresh ginger (peeled, cut into matchsticks)
  • 4 spring onions (thinly sliced on a bias)
  • 2 sheets nori (thinly sliced)
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic (minced)
  • 4 white fish fillets (6.5 oz)
  • 2 tablespoons sesame seeds (toasted)

    Directions

    1. Toss together carrots, cucumber, ginger, spring onions and nori. Whisk together mirin, soy sauce, sesame oil and garlic. Set aside.
    2. Lightly coat a frying pan with oil. Cook fish over high heat for 3 mins per side, until browned and just cooked through. Top with salad. Drizzle dressing over top and sprinkle with sesame seeds. Serve.
