- 20 tortilla wraps (tomato-basil, from ole' mexican foods (14 gm carbs with 9 gms fiber= 5 gm net carbs each) i got them at walmart. or plain 8 to 9 inch flour tortillas)
- 2 cans chicken (approx. 13 oz each white meat, shredded or 2 to 2 1/2 lb. chicken pieces, cooked, skinned, boned and shredded or approx. 1/2 to 3/4 rotisserie chicken, skinned, boned and shredded.)
- 16 oz. cheese (shredded mexican enchilada, blend or plain mexican blend)
- 16 oz. sour cream
- 1/2 cup finely chopped onion
- 2 cans chopped green chilies
- 1 1/2 Tbsp. chili powder (mild)
- 1/2 tsp. ground cumin
- 1 tsp. garlic powder
- 1/2 cup chopped parsley
- 1/3 cup chopped cilantro
- 1 1/2 Tbsp. oregano (hot and spicy, chopped or use regular oregano plus a few dashes of hot sauce, i have both the hot and spicy and regular oregano in my herb garden.)

- 4 Tbsp. olive oil
- 1 onion (medium, chopped)
- 1 clove garlic clove (1 huge elephant, or 3 to 4 regular garlic cloves, finely chopped)
- 1 can tomato paste
- 4 cans diced tomatoes (15 oz, seasoned with oregano/basil/garlic/sweet onion but no rosemary please)
- 1 can tomato sauce (8 oz, plus 1 can of water)
- 1 jalapeno (1 finely chopped, remove seeds and ribs, see disclaimer below on all chilies)
- 1 green chili (chopped hatch, or anaheim style chili, remove seeds and ribs for milder flavor or leave in for more heat.)
- 1 poblano (sliced into 1/4 x 1 inch strips, remove seeds and ribs for milder flavor or leave in for more heat)
- 1 green bell peppers (each red, yellow, orange and, sliced into 1/4 x 3 inch strips)
- 1 lime (juice of)
- 1 Tbsp. worcestershire sauce
- 1/2 cup parsley (chopped)
- 1/4 cup oregano (chopped)
- 1 Tbsp. thyme (chopped)
- 1 Tbsp. ground cumin
- 4 Tbsp. chili powder (mild)
- 2 Tbsp. sugar (to taste)
- salt
- pepper
- 8 oz. shredded cheese (to top the casserole. i suggest taco and nacho flavored cheddar)
