Description
Chocolate Pudding Pie is my all-time holiday favorite dessert. After finding out I had food allergies, I had to recreate it - only making it dairy-free, grain-free and without refined sugar. The results were amazing - you can hardly tell the difference!
Ingredients

- 1 3/4 cups almond flour
- 1/4 cup arrowroot starch
- 1/2 tsp. sea salt
- 2 Tbsp. honey
- 2 Tbsp. coconut milk
- 4 avocados
- 1/2 cup almond butter
- 1/2 cup coconut sugar
- 3 tsp. vanilla
- 1/3 cup shortening (palm)
- 1 cup cashews (soaked overnight)
- 2 bananas
- 1/4 cup coconut oil (melted)
- coconut cream (whipped, or chocolate shavings for garnish, optional)
- 1/3 cup cocoa powder

Directions
- In a mixing bowl, combine almond flour, arrowroot starch, sea salt, honey, coconut milk and 1/3 cup palm shortening and blend until just combined and crumbly.
- Press into a 9"pie plate and pierce a few times with a fork. Bake at 350F for about 8-10 minutes or until just slightly browned.
- In a small sauce pan, combine avocados, cocoa powder, almond butter, coconut sugar, vanilla and 2 Tbsp palm shortening over low heat. Stir until smooth and cook for just about 5 minutes to warm pudding. Remove from heat.
