  • 1/4 teaspoon sea salt

  • 1 sweet potato (large, at least 1 lb)
  • 2 eggs (beaten)
  • 1/2 cup maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk (or other dairy-free milk of choice)
  • 1 tart (10-inch Fluted, Pan with Removable Bottom, or you could use a pie pan and make this a pie instead, it really doesn’t matter)
