- 1/4 cup coconut aminos
- 1/4 cup lime juice (1&1/2 limes, reserve other lime half for vegetables)
- 1 tsp. maple syrup
- 1 tsp. ground cumin
- 2 tsp. chili powder
- 1/8 cayenne
- 1 tsp. dried oregano
- 2 cloves garlic (finely minced, I used a press)
- 1/2 tsp. ground black pepper
- 1 tsp. sea salt (finely ground)
- 1/4 cup olive oil
- 1 Tbsp. freshly chopped cilantro
- 2 lb. flank steak (organic, grass fed and pasture raised)
- 1 Tbsp. olive oil (or another fat)
- 2 red onions (medium, halved and sliced)
- 2 bell peppers (sweet, cut into strips, I used orange and red)
- 1 bunch scallions (ends removed - chopped into 1&1/2 “ pieces)
- 2 cloves minced garlic
- 2 Tbsp. chopped fresh cilantro
- 1 tsp. adobo seasoning
- 1/2 tsp. chili powder
- ground black pepper (to taste)
- sea salt (to taste)
