These were great - super easy compared to other stuffed pepper recipes. I added mushrooms and next time may add some chopped spinach. I would recommend roasting the peppers for 10 minutes before stuffing to soften them a bit.

Turned out great—the whole family liked it, which is surprising for our pickier preteen eater. :)

I didn't add tomato paste but it still turned out delicious! This is the second time I made this dish I can quickly see it becoming a quick weekday meal
