This was very good. I made two of them and learned some with the first crust. After rolling out, do your best to flip the crust into the pie plate so that you still have a side with the parchment (I used wax) paper. It makes it MUCH easier to get the crust laid out.
The filling is not very sweet. It was good, but we are just used to a little sweeter. I will probably add just a tad bit of sugar next time, but other than that, it was delicious.
My teen didn't even realize that it was Paleo.
