- 1/2 tsp. table salt (or sea)
- 3/4 cup sugar substitute (~ Swerve gives the most sugar-like cookie texture)
- 2 large eggs
- 1 1/4 Tbsp. coconut oil (~ Melted, or oil of your choice; not olive oil)
- 1 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 3/4 cup almonds (optional)
- 3/4 cup roll (optional)
