    Made this for the first time today! The texture turned out really well, it just wasn't quite sweet enough. I suggest adding in a bit more maple syrup! Otherwise I think it's an excellent zucchini bread recipe!
    My 3 year-old was asking for cupcakes ever since his bday about a month ago so when I saw this, I decided to make it into cupcakes by lining a muffin tin w/ cupcake wrappers & baking for about 14-15 min. The kid hasn’t eaten any veggies outside of those puréed organic fruit & veggie pouches since about 18 months old- but he ate these “chocolate cupcakes” happily. Of course mom tested for quality control & they were pretty good. ;)

    Great! I didn’t follow exact measurements just looked for a good muffin batter consistency turned out wonderful
