I altered the recipe significantly as I thought as described, it would not be very interesting.
Cauliflower portion wasn't altered. To the coconut milk and eggs, I added ground ginger, curry, red pepper flakes, Weber's Roasted Garlic and herbs, and hot paprika to the nutmeg. To the onions, I added a red bell pepper and because I didn't have enough spinach, I used spicy arugula. I also added fresh minced garlic. I grilled the chicken with Fresh Market's Signature Seasonings instead of sautéing. On top, I sprinkled fresh shredded parmesean. I also think it needs to cook at a higher temp and for longer time period. I rate a 4-star with my changes.
