- 3/4 tsp. lemon extract
- 1/2 tsp. vanilla extract
- 3 cups blanched almond flour
- 1 Tbsp. coconut flour
- 1 Tbsp. coconut sugar (or other non-liquid sweetener of choice)
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder (make sure to use grain-free baking powder, if necessary)
- 1/4 tsp. salt
- 1/2 cup blueberries (dried unsweetened, sweetened would work, too)
- 1/3 cup flaked almonds (or 2-3 tablespoons coarse sugar, optional, use almonds for paleo)
