- 1 chile pepper (green, seeded and chopped finely, optional)
- 1 Tbsp. Garam Masala
- 4 tomatoes (chopped)
- 1/2 tsp. red chile powder (not cayenne, optional)
- 1/2 tsp. turmeric (ground)
- 1 tsp. salt (plus more to taste)
- 1/2 lb. spinach (chopped finely)
- 1/2 cup coconut cream (or coconut milk)
- 1 lime (plus wedges to serve)
- 1 cup grated coconut (toasted)
- 1/2 tsp. mustard seeds (toasted)
- 1/4 cup cilantro leaves
