- 1 small onion (minced, about 1 cup)
- 3 cloves garlic (crushed)
- 3 medium tomatoes (diced or grated, about 2 cups, see notes)
- 1 Tbsp. smoked paprika

The best ever! But I find that It’s best if he is Spanish chorizo which is dry cured versus the Mexican fresh chorizo

Really amazing. I used sushi rice and a 10x18 pan on two gas burners. Worked great. I subbed in scallops for the clams and put them in with the shrimp. I used the timing for the recipe exactly, even without the clams. You could put 2 or 4 more chicken thighs if you wanted to. If you are not a big salt user, watch the salt. It can get salty pretty quickly because it really condenses the flavor. Really excellent. Looking forward to making it again.

love it a little work cleaning the clams and to devein the shrimp but worth it
pickled up a paella pan from Spai o Amazon. You need to keep turning the pan for it to come out right.

Delish. Made it as is and made it with boneless thighs chopped up, with clams and with mussels, and it works every which way. Crowd pleaser every time.
