- 8 oz. shirataki noodles (2 packets, tofu, can substitute bean thread noodles or any other regular noodle)
- 1/2 onion (chopped)
- 1 cup broccoli florets
- 1/2 red pepper (cut into strips)
- 1 tsp. ginger garlic paste
- 1/2 cup tofu
- 2 eggs (optional)
- 1/2 tsp. red pepper flakes
- 1/3 cup coconut milk (I used canned coconut milk)
- 3 Tbsp. peanut butter
- 2 Tbsp. tamarind paste
- 1 Tbsp. soy sauce
- 1/2 Tbsp. rice vinegar
- 1/2 Tbsp. sesame oil
- 1 Tbsp. lemon juice
- 2 tsp. splenda
- 1/2 tsp. cumin powder
- 1/2 tsp. ground coriander
- 1/2 Tbsp. Sriracha sauce
- 1/2 tsp. red pepper flakes
- 1/4 cup green onions
- 2 Tbsp. peanuts (crushed)

I accidentally poured all of the sauce into a halved amount of noodles and vegetables so it was a little wet, but otherwise a delicious option! I might add a little cornstarch next time to thicken the sauce and get t to stick to the noodles a little bit better, but otherwise, great recipe!!

very good flavors but needed a little extra sweetness. i added some honey and it balanced out much better

I could not find any Tamarind paste so I bought some Pad Thai sauce from a pouche. I then added some coconut milk to loosen up the sauce. Also, I browned the tofu in coconut oil instead of breaking it up and adding it to the vegetable mixture. All in all, it was quite delicious!
